Chocolate Chip Cheese cake Recipe

If you know me, you know how much I enjoy cheesecake. It is most likely my favorite thing to bake out of all the other desserts I made like chocolate chip cookies or muffins. I will be providing several tips and tricks along the way in this recipe and on how to prevent your cheese cake from cracking and how long should you store your cheesecake before its time to serve.

How to prevent cheesecake from cracking?

Make sure to leave your cream cheese at room temperature for 1-2hours before mixing in a mixer or mixing bowl. Do not overwhip your cheesecake, having more air bubbles will increase your chances of forming cracks. If air bubbles are formed, just tap the side of your spring foam pan or regular pan a couple of times to release them.

  • Granulated Sugar can be switched out with brown sugar or sweetener
  • Sour cream switched for greek yogurt
  • Pure vanilla extract swapped with an artificial one
  • Chocolate chips switched with chocolate bite chunks or dark chocolate

Easy Chocolate Chip Cheese Cake Recipe

Equipment

  • Measuring cups

  • Mixer/ food processor

  • Mixing bowl

  • Spring foam pan / baking pan

Ingredients

  • Crust:

  • 3 1/2 cups of oreo cookies crushed

  • 5 1/2 tablespoons of butter (unsalted/salted) or margerine

  • Filling:

  • 2 packages of cream cheese

  • 1 1/3 cup of white sugar

  • 2 eggs

  • 2 1/2 teaspoons vanilla extract

  • 1 cup sour cream

  • 1 tsp all purpose flour (for chocolate chips)

Instructions

Pre-heat Oven

Pre-heat oven to 350°F

Creating the Crust

Toss Oreo cookies into a food processor or blender then grind into fine crumbs then add into a bowl

Creating the Crust

Combine crumbs with melted butter until properly mixed

Pour the Crumb Mixture

Grease a spring foam pan or pie pan then pour the Oreo crumb mixture and press into an even layer Set it aside

Create the filling

In a mixing bowl beat cream cheese on medium to high speed for 3-4 minutes.

Create the filling

Add sugar and beat for another 1-2 minutes then add in the 2 eggs and beat for an additional 1-2 minutes until fully mixed

Add the chocolate chips

Before pouring in the chocolate chips into the filling, combine chocolate chips with all purpose flour in a bowl to prevent chocolate chips from sinking into the bottom if by chance your cream cheese mixture is to light. Then toss into filling. Mix well

Pour into pan

Pour cream cheese mixture into the pan and make sure there is no bubbles or lumps. If any bubbles tap on the side of the pan to remove them.

Let it cool

Cool for 1hour then remove from spring foam pan. Store in fridge for 4-5hours then serve.
